European standard for hygiene requirements for commercial dishwashing has been published

The European standard DIN EN 17735 Commercial dishwashing machines - Hygiene requirement and testing* has been published with the issue date 2023-02.

In Germany, hygiene requirements and testing were previously described in DIN standards 10510, 10511, 10512, 10522 and the pre-standard DIN Spec 10534, and in other countries there were also local guidelines or specifications for temperatures in the dishwasher.

With this EN standard, a European standard is available for the first time which specifies the hygiene requirements for the operation of commercial dishwashers and the procedures for corresponding tests on the dishwashers and includes a guideline for the hygienic and proper operation as well as the care and maintenance of dishwashers.

The standards institutes of the following countries are required to adopt this European standard in their national regulations:
Austria, Belgium, Bulgaria, Croatia, Cyprus, Czech Republic, Denmark, Estonia, Finland, France, Germany, Greece, Hungary, Iceland, Ireland, Italy, Latvia, Lithuania, Luxembourg, Malta, Netherlands, Northern Macedonia, Norway, Poland, Portugal, Romania, Serbia, Slovakia, Slovenia, Spain, Sweden, Switzerland, Turkey, United Kingdom.

The EN 17735 applies to dishwashing machines used in a professional environment for cleaning washware that is used in contact with food, such as plates, crockery, glassware, cutlery, reusable boxes and similar articles. These machines are used in professional kitchens e.g. in restaurants, canteens and hospitals and in businesses such as bakeries, butcher's shops, etc.
The standard does not apply to domestic dishwashing machines, washer disinfectors for the treatment of medical devices and machines for industrial use.

A large part of the content of the existing German standards has been incorporated into DIN EN 17735. Therefore, the previous German standards for hygiene requirements for commercial dishwashing DIN 10510, 10511, 10512 and the pre-standard DIN Spec 10534 are expected to be withdrawn in June 2023.
For points that are included in the previous German standards but not in DIN EN 17735, such as type testing with glasses, a residual standard is currently being developed by the responsible DIN committee.
A first draft of this E DIN 10544 Food hygiene - Commercial dishwashing with single-tank-, glass- and multi-tank transport dishwashing machines - Supplementary hygiene requirements and testing, is now available.

DIN 10522 "Food hygiene - Commercial automated warewashing of reusable crates and reusable containers for unpackaged foodstuffs - Hygiene requirements, testing" is still applicable unchanged, as its scope of application for reusable crates and reusable containers used for the storage and transport of unpackaged foodstuffs within the commercial sector is not covered by DIN EN 17735.
