Sustainability Recommendations for Commercial Dishwashing

Published at 12.09.2023

The Working Group on Commercial Dishwashing (AK GGS - Arbeitskreis Gewerbliches Geschirrspülen) published a paper on its website with recommendations on the topic of sustainability. The reason for this is the growing interest in environmentally friendly solutions in commercial dishwashing.

Due to inflation-related price increases, customers are increasingly looking for ways to save energy and costs. At the same time, interest in sustainable dishwashing solutions is growing. For successful dishwashing results, the four factors of chemicals, mechanics, temperature and time must continue to be in exact proportion to each other.

Therefore, the AK GGS warns against lowering the dishwashing temperature without the simultaneous use of suitable disinfection products, as this can result in a loss of cleaning quality and hygiene.

With the increasing demand for environmentally friendly cleaning products, eco-labels offer orientation. These labels are awarded by independent testing by neutral bodies to products that represent environmentally compatible alternatives to conventional dishwashing detergents while providing good cleaning performance.

The most important component in the cleaning process remains water quality. Minerals in water lead to deposits in dishwashers and increase the consumption of energy and detergents. Water treatment systems offer an environmentally friendly solution here. They enable a reduction in dosing quantities and lower maintenance and service costs.

Increasingly, transport and packaging are also being considered from a sustainability perspective. To reduce emissions, the AK GSS recommends highly concentrated products for less transport weight and large containers to reduce transport volume.

Further savings potential can be realised by means of service and professional advice from the detergent manufacturers. Depending on the respective processes and requirements, suitable products and correct dosage as well as comprehensive training of the staff reduce the consumption quantities and thus cut costs.
